Cheesy Potato Pancakes

Easy and cheesy way to use your leftover mashed potatoes

Cheesy Potato Pancakes

PREP TIME: 25 MIN    Makes 10-12 pancakes

Ingredients:

3 cups chilled leftover mashed potatoes

2/3 cups shredded cheddar cheese

2 tbs chopped scallions

1 egg, lightly beaten

3 tbs all-purpose flour

Vegetable oil for pan frying

Sour cream or apple sauce for topping

Procedure:

1. In a large bowl, stir together mashed potatoes, cheese, scallions, egg and 2 tbs flour until combined. Using hands, divide into 12 portions. Roll each portion into a compact ball and flatten into 1/2 in thick pancake.

2. Chill for 30 mins or until very firm.

3. put remaining flour into a shallow dish or plate and carefully coat each pancake in flour, gently tapping off excess.

4. Heat oil in large saute pan, using enough oil to coat bottom of pan or about 1/3 up pancakes.

5. Fry pancakes in batches until golden and crispy on both sides, 3-4 minutes. Add oil to batches as needed and do not overcrowd pan.

6. Transfer pancakes to paper towel lined plate and sprinkle generously with salt.

7. Serve immediately with sour cream or apple sauce.
