Bread Pudding

We love Pecan Pie in this bread pudding, but try it with your favorite!

Bread Pudding

Prep time: 1.5 hours - Serves 8

Ingredients:

Cooking spray

10 cups of dinner rolls in 1/2 in pieces

1 cup evaporated milk

1 cup milk

1/2 cup sugar

1 tsp vanilla extract

2 large eggs

Large pinch fresh ground nutmeg

Kosher salt

3 slices pie, cut into bite size pieces

Vanilla ice cream, for serving

Caramel sauce, for serving

Procedure:

1. Preheat oven to 350°. Lightly coat a 2 quart baking dish with cooking spray.

2. Spread bread pieces in a single layer on a baking sheet and bake until toasted and golden, tossing halfway through, about 15 mins. Let cool.

3. Whisk together evaporated milk, milk, sugar, vanilla, eggs, nutmeg and pinch of salt in a large bowl. Add cooled bread cubes. Toss to combine and set aside until the bread soaks up most of the liquid– about 30 mins.    

4. Stir in pie pieces into mixture and transfer to prepared baking dish. Bake until bread pudding is set and golden, 30-40 mins. Let rest for at least 10 minutes. Serve warm or at room temperature topped with ice cream and caramel.

 

 

 

Pie Smores

S’mores

Fun to make and even better to eat.

Holiday Pie S’mores

Use any pie– try two or three types.

Adjust amount depending on your crowd. Serve 1 or 100 with this classic.

Ingredients:

- Graham crackers (twice as many pieces as chocolate and pie)

- Marshmallows (largest size)

- Milk chocolate bar

- Leftover pie, cut into squares equal to graham cracker & chocolate pieces

- Caramel sauce (optional)

- Metal skewers with heat-proof handle

- Fire, fire wood, lighter, etc.

 Procedure:

1. Start fire. You will need high flames for optimal marshmallow toasting.

2. Break graham crackers, chocolate and pie into desired size pieces while fire is working.

3. Skewer marshmallows on skewers and toast until desired toasty-ness. Inexperienced s’more chefs will accidentally light marshmallow on fire. Experienced s’more chefs light on purpose.

4. Layer graham cracker with chocolate and pie, then layer hot marshmallow and unskewer using a second pieces of graham cracker on top of marshmallow.  Top with caramel or other sauce.

5. Enjoy. Repeat. Enjoy again.

Leftover Pie Truffles

Truffles look hard- but don’t be fooled. Play around with different flavors and toppings- bring everyone in the kitchen!

Pie Truffles

Any pie, any toppings. Infinite options.

Ingredients:

· 1 slice of pie for about 5 truffles

· Desired chocolate

· Desired toppings

Procedure:

1. Using one piece of desired pie, and using either food processor or fork and knife, chop pie into very smooth mixture with pie crust well incorporated into filling with no large pieces remaining.

2. Portion mix into 1-2 bite pieces and chill until very firm– at least 30 minutes.

3. Melt chocolate over double boiler or in microwave in 30 second intervals, stirring between each interval.

4. Roll pie balls in chocolate using two forks.

5. Lay on wire rack over baking sheet.

6. While chocolate is still warm, add toppings.

7. Chill for 1-2 hours. Enjoy!
