Turkey Tortilla Soup

Tex-Mex your Leftover Turkey

Warm you up and clear the fridge.

PREP TIME: 50 MIN - SERVES 4

 

Ingredients:

2 tbs vegetable oil

1 tbs chili powder

2 garlic cloves, thinly sliced

1 medium onion, chopped

1 chipotle in adobo sauce, minced

Kosher salt

4 cups turkey stock or low-sodium chicken broth

15 oz canned diced tomatoes

2 cups corn tortilla chips

1 cup corn kernels– fresh or canned

2 cups shredded cooked turkey

Juice of two limes

1/4 cup shredded cheese

1/2 cup cilantro leaves

1 small avocado, diced

 

Procedure:

1. Heat oil in a large saucepan over medium heat. Add chili powder, garlic, onion, chipotle and 1 tsp of salt and cook, stirring– until onion softens, About 5 mins.

2. Add stock, tomatoes, 1/2 cup water and half of the tortilla chips. Bring to a boil, reduce heat slightly and simmer, uncovered until the soup has slightly reduced– about 25 minutes. Add corn and cook 5 more minutes.

3. Remove from heat and stir in turkey and lime juice. Adjust seasoning with salt and lime if needed. Divide soup among 4 bowls, top with cheese, cilantro, remaining chips and avocado. Serve hot.
